2 cups unsweetened milk (dairy or non-dairy like almond, oat, or soy)
1 cup mixed berries (fresh or frozen)
2-3 tablespoons maple syrup or honey (adjust to taste)
1/2 teaspoon vanilla extract

Instructions

Step 1: In a medium mixing bowl, combine the unsweetened milk, chia seeds, maple syrup (or honey), and vanilla extract. Whisk vigorously for about 30 seconds to ensure there are no clumps.
Step 2: Let the mixture sit for 5 minutes, then whisk again for another 15-20 seconds. This helps prevent the chia seeds from settling at the bottom and ensures a smooth, even texture for your chia pudding.
Step 3: Gently fold in the mixed berries. If using fresh berries, you can lightly mash some for more flavor release. If using frozen berries, add them directly, they will thaw and infuse the pudding overnight.
Step 4: Divide the mixture evenly into two airtight containers or jars. Cover them tightly and refrigerate for at least 4 hours, or preferably overnight, allowing the chia seeds to fully hydrate and thicken.
Step 5: When ready to serve, give the chia pudding a quick stir. Enjoy as is, or add your favorite toppings such as extra fresh berries, a sprinkle of granola, chopped nuts, or a dollop of yogurt.

Notes

For an even creamier texture, blend half of the chia pudding mixture with some extra milk before combining with the other half. Adjust sweetness to your preference. This pudding can be stored in the refrigerator for up to 3-4 days.
