Ingredients
4 cups fresh or frozen pitted cherries
3/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1/2 teaspoon almond extract
2 cups all-purpose flour
1/4 cup granulated sugar (for topping)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup whole milk
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
Step 2: In a large bowl, combine the cherries, 3/4 cup sugar, cornstarch, lemon juice, and almond extract. Toss well to coat and pour the mixture into the prepared baking dish.
Step 3: In another bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
Step 4: Use a pastry cutter or your fingers to work the cold butter into the flour mixture until it looks like coarse crumbs.
Step 5: Stir in the milk and vanilla extract until just combined. Do not overmix.
Step 6: Drop spoonfuls of the dough over the cherry filling, covering it unevenly to let the fruit peek through.
Step 7: Bake for 40-45 minutes, or until the filling is bubbling and the topping is golden brown.
Step 8: Allow the cobbler to cool for at least 15 minutes before serving to let the juices thicken.
Notes
If using frozen cherries, do not thaw them completely; just toss them with the sugar and starch and bake slightly longer if needed.
