1 recipe pie dough for a single crust (store-bought or homemade)
3 large yellow onions, thinly sliced
2 tbsp unsalted butter
1 tbsp olive oil
1/2 tsp salt, plus more for seasoning
1/4 tsp black pepper, plus more for seasoning
2 medium Yukon Gold potatoes (about 1 lb), very thinly sliced (about 1/8-inch thick)
1 1/2 cups shredded sharp cheddar cheese
1 large egg, for egg wash
1 tbsp water, for egg wash
Fresh thyme or rosemary sprigs (optional, for garnish)

Instructions

Step 1: Prepare the Pie Dough. If making homemade dough, prepare it and chill for at least 30 minutes. If using store-bought, let it come to room temperature slightly for easier rolling. Preheat your oven to 375°F (190°C).
Step 2: Caramelize the Onions. In a large skillet, melt butter and olive oil over medium-low heat. Add the thinly sliced onions, 1/2 tsp salt, and 1/4 tsp pepper. Cook slowly, stirring occasionally, for 30-40 minutes, until the onions are deeply golden brown and very soft. Set aside to cool slightly.
Step 3: Prepare the Potatoes. While onions are cooking, thinly slice the Yukon Gold potatoes. A mandoline is excellent for this to ensure even thickness. Place slices in a bowl and set aside.
Step 4: Roll out the Dough. On a lightly floured surface, roll out your pie dough into a roughly 12-14 inch circle. Carefully transfer the dough to a baking sheet lined with parchment paper.
Step 5: Assemble the Galette. Spread the cooled caramelized onions evenly over the dough, leaving a 2-inch border all around. Arrange the thinly sliced potatoes over the onions, overlapping them slightly. Season the potatoes generously with salt and pepper. Sprinkle the shredded cheddar cheese evenly over the potatoes.
Step 6: Fold the Edges. Carefully fold the edges of the dough over the filling, creating pleats as you go. Don't worry about perfection; the rustic look is part of the charm of this Cheddar, Potato & Caramelized Onion Galette.
Step 7: Prepare Egg Wash and Bake. In a small bowl, whisk together the egg and water to make an egg wash. Brush the exposed pastry crust with the egg wash. If the crust starts to brown too quickly, loosely tent the galette with aluminum foil.
