1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
2 large bell peppers (red, yellow, or orange), cut into 1-inch pieces
1 large red onion, cut into 1-inch pieces
1 cup favorite BBQ marinade or sauce, plus extra for brushing
1 tbsp olive oil (for grill grates)
Wooden or metal skewers (if wooden, soak for 30 minutes)

Instructions

Step 1: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the charcoal grill.
Step 2: In a large bowl, combine the cut chicken thigh pieces, bell pepper pieces, and red onion pieces.
Step 3: Pour 1 cup of your chosen BBQ marinade over the chicken and vegetables. Toss gently to ensure all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow flavors to meld. This is key for flavorful charcoal grill recipes.
