1 medium head green cabbage (about 2-2.5 lbs)
3 tablespoons extra virgin olive oil
1 teaspoon sea salt (or to taste)

1 teaspoon garlic powder
1 teaspoon paprika (smoked or sweet)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
Step 2: Prepare the cabbage. Remove any loose or damaged outer leaves from the cabbage. Place the cabbage on a cutting board, stem-side down. Using a sharp chef's knife, carefully slice the cabbage into 1/2 to 3/4-inch thick 'steaks' or rounds. Ensure each slice includes a portion of the core to keep the leaves intact. You should get about 4-6 good slices from a medium head.
Step 3: Arrange the cabbage. Lay the cabbage steaks in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two baking sheets if necessary to ensure even roasting and crisp edges.
Step 4: Season generously. Drizzle the olive oil over both sides of each cabbage steak. In a small bowl, combine the salt, black pepper, garlic powder, and paprika. Sprinkle this seasoning mix evenly over both sides of the cabbage steaks.
Step 5: Roast to perfection. Transfer the baking sheet(s) to the preheated oven. Roast for 15 minutes, then carefully flip each cabbage steak. Continue roasting for another 15-20 minutes, or until the cabbage is tender, beautifully caramelized, and has crispy, slightly charred edges.
