1 large head of broccoli (about 1 lb), cut into florets
2 tbsp vegetable oil, divided
1 tsp minced garlic (plus extra for sauce if preferred)
1 tsp grated fresh ginger (plus extra for sauce if preferred)
1/2 cup beef broth
3 tbsp soy sauce (for sauce)
2 tbsp oyster sauce
1 tbsp brown sugar (or honey)
1 tbsp cornstarch (for sauce)
1 tsp rice vinegar
Optional: sesame seeds or chopped green onions for garnish
Optional: red pepper flakes for heat
Instructions
Step 1: Prepare and Marinate the Beef: Pat the beef dry. Slice thinly against the grain. In a bowl, combine beef with 1 tbsp soy sauce, 1 tbsp cornstarch, 1 tsp sesame oil, and 1/2 tsp baking soda. Mix well and let marinate for 15-30 minutes at room temperature.
Step 2: Prepare the Broccoli: Cut broccoli into uniform florets. Blanch in boiling salted water for 2-3 minutes until crisp-tender, or steam. Immediately drain and transfer to an ice bath to stop cooking. Drain thoroughly and set aside.
Step 3: Whisk Together the Sauce: In a small bowl, whisk together beef broth, 3 tbsp soy sauce, oyster sauce, brown sugar, 1 tbsp cornstarch, rice vinegar, and optionally, 1/2 tsp ginger and 1 tsp garlic. Ensure cornstarch is fully dissolved.
Step 4: Sear the Beef: Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add marinated beef in batches, searing for 1-2 minutes per side until browned. Do not overcrowd. Remove beef and set aside.
Step 5: Sauté Aromatics: If needed, add another tsp of oil. Add the remaining minced garlic and grated ginger (if not in sauce) and stir-fry for 30 seconds until fragrant.
Step 6: Combine and Thicken: Pour the whisked sauce into the skillet. Bring to a simmer, stirring constantly, until the sauce thickens and becomes glossy.
Step 7: Add Beef and Broccoli Back to the Pan: Return the seared beef and blanched broccoli to the skillet with the thickened sauce. Toss gently to coat everything. Cook for 1-2 minutes to heat through and meld flavors.
