2 lbs (900g) ground beef (80/20 lean)
1 large yellow onion, chopped
3 cloves garlic, minced
2 lbs (900g) Russet potatoes, peeled and diced into 1/2-inch cubes
2 cups (480ml) beef broth
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1/2 tsp dried oregano
Salt and freshly ground black pepper to taste
2 cups (220g) shredded sharp cheddar cheese
Fresh chopped parsley or green onions, for garnish (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C). If using a baking dish, lightly grease it. If using an oven-safe skillet, ensure it's clean and ready for stovetop-to-oven action.
Step 2: In your large skillet (if oven-safe) or a separate large pan, brown the ground beef over medium-high heat. Break it up with a spoon as it cooks. Once no pink remains, drain off any excess fat.
Step 3: Add the chopped onion and minced garlic to the cooked ground beef. Sauté for 5-7 minutes, or until the onion is softened and translucent and the garlic is fragrant.
Step 4: Stir in the diced potatoes, beef broth, Worcestershire sauce, smoked paprika, dried oregano, salt, and black pepper. Bring the mixture to a gentle simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until the potatoes are tender-crisp.
Step 5: If you cooked in a separate pan, transfer the mixture to your prepared 9x13 inch baking dish. If using an oven-safe skillet, simply ensure the potato mixture is evenly spread across the bottom.
Step 6: Sprinkle the shredded cheddar cheese evenly over the top of the potato and beef mixture.
Step 7: Transfer the skillet or baking dish to the preheated oven. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. For an extra golden crust, you can briefly broil for the last 1-2 minutes, watching carefully to prevent burning.
Step 8: Carefully remove from the oven. Let it rest for 5 minutes before serving to allow the flavors to meld and the cheese to set slightly. Garnish with fresh chopped parsley or green onions if desired.

Notes

Leftovers store wonderfully in an airtight container for up to 3-4 days in the refrigerator. Reheat in the microwave or oven until warmed through. For a crispier topping, you can finish under the broiler for a minute or two.
