Ingredients
1 block (5.2 oz / 150g) Boursin Garlic & Fine Herbs cheese
2 pints (about 24 oz / 680g) cherry tomatoes, halved
4 cloves garlic, thinly sliced (or 2 tsp minced garlic)
1/4 cup olive oil, plus more for drizzling
1/2 teaspoon salt
1/4 teaspoon black pepper
10 oz (280g) short pasta (e.g., penne, rotini, orecchiette)
1/4 cup fresh basil, chopped, for garnish
Reserved pasta water (as needed)
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a large oven-safe baking dish (around 9x13 inches), combine the halved cherry tomatoes, sliced garlic, olive oil, salt, and black pepper. Toss gently to coat all the tomatoes.
Step 3: Place the block of Boursin cheese directly in the center of the tomato mixture in the baking dish.
Step 4: Bake for 25-30 minutes, or until the tomatoes have burst and softened, and the Boursin cheese is melted and bubbly. The tomatoes should look slightly caramelized.
Step 5: While the cheese and tomatoes are baking, cook the pasta according to package directions in a large pot of salted boiling water until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the remaining pasta.
Step 6: Carefully remove the baking dish from the oven. Using a fork or a potato masher, gently mash the roasted tomatoes and Boursin cheese together, stirring vigorously to combine them into a creamy sauce. If the sauce seems too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.
Step 7: Add the drained, cooked pasta to the baking dish with the sauce. Toss everything together until the pasta is evenly coated.

Notes
For an extra layer of flavor, you can add a pinch of red pepper flakes to the tomatoes before roasting. If you don't have fresh basil, fresh parsley or chives can be used as a garnish. This recipe is easily scaled up for larger gatherings.
