Ingredients
12 oz (340g) pasta (such as penne, fettuccine, or linguine)
1 tbsp olive oil
3 cloves garlic, minced
1/2 cup (about 60g) sun-dried tomatoes, oil-packed, drained and chopped
5.2 oz (150g) Boursin Garlic & Fine Herbs cheese
1/2 cup (120ml) reserved pasta water
1/4 cup (60ml) heavy cream (optional, for extra richness)
5 oz (140g) fresh baby spinach
Salt and freshly ground black pepper to taste
Fresh Parmesan cheese, grated (for serving)
Fresh basil or parsley, chopped (for garnish)
Instructions
Step 1: Cook the pasta according to package directions in salted boiling water. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set aside.
Step 2: While the pasta is cooking, heat the olive oil in a large skillet or deep pan over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
Step 3: Add the chopped sun-dried tomatoes to the skillet and sauté for 2-3 minutes, allowing their flavors to meld with the garlic.
Step 4: Reduce the heat to low. Add the Boursin Garlic & Fine Herbs cheese to the skillet. Stir constantly until the cheese begins to melt and create a creamy base.
Step 5: Gradually whisk in the reserved pasta water, a little at a time, until a smooth, creamy sauce forms. If using, stir in the heavy cream for an even richer sauce.
Step 6: Add the cooked and drained pasta to the skillet with the sauce. Toss to coat evenly. Season with salt and black pepper to taste.
Step 7: Add the fresh baby spinach to the pasta. Continue to toss until the spinach wilts down into the sauce. This usually takes 1-2 minutes.
Step 8: Serve immediately, garnished with freshly grated Parmesan cheese and chopped fresh basil or parsley. Enjoy your delicious Boursin pasta!
Notes
For best results, use good quality Boursin cheese. If you prefer a thinner sauce, add a little more reserved pasta water. You can easily add cooked chicken or shrimp for a heartier meal. Ensure to taste and adjust seasonings before serving.
