Ingredients
2 cups fresh or frozen blueberries
1/4 cup maple syrup or honey (adjust to taste)
1 tablespoon fresh lemon juice
1/4 cup water or coconut water (optional, for blending consistency)
Instructions
Step 1: Rinse your fresh blueberries. If using frozen blueberries, there is no need to thaw them.
Step 2: In a blender, combine the blueberries, maple syrup (or honey), fresh lemon juice, and water (if using). Blend until the mixture is completely smooth. For an extra smooth popsicle, you can strain the mixture through a fine-mesh sieve to remove any small skins or seeds.
Step 3: Carefully pour the blueberry mixture into your popsicle molds, leaving about 1/4 inch of space at the top to allow for expansion during freezing.
Step 4: Insert popsicle sticks into the molds. If your molds don't have built-in stick holders, you can cover the top with foil and poke the sticks through to keep them upright.
Step 5: Place the filled popsicle molds in the freezer. Freeze for a minimum of 4-6 hours, or preferably overnight, until the popsicles are completely solid.

Notes
For best results, use very ripe, sweet blueberries. Adjust the amount of sweetener to your preference. If you like a tarter popsicle, reduce the maple syrup.
