Ingredients
2 cups (500g) cottage cheese (full-fat or 2% recommended)
3 large eggs
1/2 cup (100g) granulated sugar (or preferred sweetener)
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional, but highly recommended)
1/2 cup (60g) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1.5 cups (200g) fresh or frozen blueberries
Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease an 8x8 or 9x9 inch baking dish.
Step 2: In a large mixing bowl, combine the cottage cheese, eggs, granulated sugar, vanilla extract, and lemon zest (if using). Whisk everything together thoroughly until well combined. Some small cottage cheese curds are fine.
Step 3: In a separate small bowl, whisk together the all-purpose flour, baking powder, and salt.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 5: Gently fold in the fresh or frozen blueberries, distributing them evenly throughout the batter.
Step 6: Pour the batter into your prepared baking dish, spreading it out evenly with a spatula.
Step 7: Bake for 35-45 minutes, or until the top is lightly golden brown and a toothpick inserted into the center comes out clean and the bake is set.
Step 8: Remove from the oven and let it cool in the dish for at least 15-20 minutes before slicing and serving. This cooling time allows the bake to set completely.
Notes
For an extra touch, serve warm with a dollop of Greek yogurt, a drizzle of maple syrup, or a sprinkle of powdered sugar. Stores well in an airtight container in the refrigerator for up to 4-5 days.
