Ingredients
2 slices of sturdy bread (sourdough, brioche, or challah work well)
1 tablespoon unsalted butter, softened, or mayonnaise
2-3 ounces Brie cheese, rind on, thinly sliced
1/4 cup fresh blueberries
1-2 tablespoons hot honey (store-bought or homemade)
Instructions
Step 1: Prepare your bread. Spread butter or mayonnaise evenly on one side of each slice of bread. This ensures a golden, crispy exterior.
Step 2: Assemble the sandwich. Place one slice of bread, buttered-side down, in a cold skillet or on a griddle. Layer half of the Brie slices on top.
Step 3: Add the blueberries. Evenly scatter the fresh blueberries over the Brie.
Step 4: Add more cheese. Top the blueberries with the remaining Brie slices.
Step 5: Close the sandwich. Place the second slice of bread on top, buttered-side up.
Step 6: Cook the grilled cheese. Heat the skillet over medium-low heat. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Press down gently with a spatula occasionally.
Step 7: Finish with hot honey. Once golden and melted, remove the Blueberry Brie Grilled Cheese with Hot Honey from the skillet. Immediately drizzle generously with hot honey.
Step 8: Serve and enjoy! Let it cool for a minute before slicing and serving. The flavors of this Blueberry Brie Grilled Cheese with Hot Honey are best enjoyed warm.
Notes
For an extra crispy crust, consider spreading a thin layer of mayonnaise on the outside of the bread instead of butter. It browns beautifully and adds a subtle tang.
