Let it cool completely. For a smoother compote, you can mash some of the berries gently with a fork or pulse briefly with an immersion blender, but leave some chunks for texture.
Step 2: Prepare the Cake. Cut your pound cake or sponge cake into uniform 1-inch cubes. If you prefer a slightly softer cake base, you can lightly brush the cake cubes with a tablespoon or two of fruit liqueur (like Chambord or Cointreau) or a simple syrup, but this is optional as the compote will moisten it.
Step 3: Make the Mascarpone Cream. In a large mixing bowl with an electric mixer (or stand mixer with whisk attachment), beat the very cold heavy cream on medium-high speed until soft peaks form. In a separate bowl, whisk together the softened mascarpone cheese, powdered sugar, and almond extract (if using) until smooth.
