Discover the ultimate best zucchini bread recipe for a moist, flavorful, and perfectly spiced loaf. This classic recipe transforms garden-fresh zucchini into a tender, sweet quick bread that's perfect for breakfast, snacks, or dessert. Simple to make and utterly delicious!

  • Total Time: 80 minutes
  • Yield: 1 loaf (12 slices) 1x

Ingredients

Scale

2 large eggs, lightly beaten
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil (or canola oil)
1 teaspoon vanilla extract
1 1/2 cups grated zucchini (about 1-2 medium zucchini)
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
Optional: 1 cup chocolate chips or chopped walnuts/pecans

Instructions

Step 1: Preheat your oven to 325°F (160°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper, leaving an overhang on the long sides for easy removal.
Step 2: In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until well combined and smooth.
Step 3: Fold in the grated zucchini. Do not squeeze out the liquid unless the zucchini is excessively watery, as the moisture is crucial for a tender loaf.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are fine. If using, gently fold in chocolate chips or nuts.
Step 6: Pour the batter into your prepared loaf pan and spread it evenly. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. If the top browns too quickly, loosely tent with foil.
Step 7: Once baked, let the zucchini bread cool in the pan on a wire rack for 10-15 minutes. Then, carefully lift it out of the pan and let it cool completely on the wire rack before slicing and serving.

Notes

For an extra burst of flavor, add a teaspoon of lemon zest to the batter. This bread freezes beautifully; wrap individual slices tightly in plastic wrap and then aluminum foil for up to 3 months.
