Spice up your taco night with these incredibly flavorful and easy-to-make baked chipotle tofu tacos. Extra-firm tofu is marinated in a smoky, spicy chipotle sauce, baked until perfectly crispy, and served in warm corn tortillas with your favorite fresh toppings. A healthy, plant-based meal that's packed with flavor!

1 (14-ounce) block extra-firm tofu, pressed and torn into bite-sized pieces
2-3 chipotle peppers in adobo sauce, minced (plus 1-2 tbsp adobo sauce)
2 tbsp olive oil
1 tbsp fresh lime juice
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
8 small corn tortillas
For serving (suggestions): sliced avocado, pickled red onions, fresh cilantro, salsa, vegan sour cream or crema, extra lime wedges

Instructions

Step 1: Begin by pressing the extra-firm tofu for at least 30 minutes to remove excess water. While the tofu is pressing, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Once pressed, tear the tofu block into irregular, bite-sized pieces. Tearing helps create more textured surfaces for the marinade to adhere to.
Step 3: In a medium bowl, combine the minced chipotle peppers, adobo sauce, olive oil, fresh lime juice, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Mix well to create the marinade.
Step 4: Add the torn tofu pieces to the bowl with the marinade. Gently toss to ensure all tofu pieces are thoroughly coated. Let the tofu marinate for at least 15-20 minutes at room temperature, or longer in the refrigerator if time allows.
Step 5: Spread the marinated tofu in a single layer on the prepared baking sheet. Ensure the pieces are not overcrowded, which helps them crisp up. Bake for 25-30 minutes, flipping the tofu halfway through, until golden brown and slightly crispy at the edges.
Step 6: While the tofu bakes, warm your corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side, in the microwave (wrapped in a damp paper towel) for 15-30 seconds, or briefly over a gas flame.
Step 7: Assemble your Baked Chipotle Tofu Tacos by filling each warm tortilla with the baked chipotle tofu. Garnish with your favorite toppings such as sliced avocado, pickled red onions, fresh cilantro, salsa, and a squeeze of fresh lime juice. Serve immediately and enjoy!

Notes

For best results, don't rush the tofu pressing step; it significantly impacts texture. Adjust the number of chipotle peppers to your preferred spice level. Leftover tofu is fantastic in salads or bowls!
