Ingredients
2 pints (about 4 cups) cherry or grape tomatoes
4 cloves garlic, minced
3 tablespoons extra virgin olive oil, divided
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 (8-ounce) ball burrata cheese, drained
1/4 cup fresh basil leaves, torn or chopped
Optional: red pepper flakes for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: In an 8x8 inch (or similar) baking dish, combine the cherry tomatoes, minced garlic, 2 tablespoons of olive oil, sea salt, and black pepper. Toss gently to coat the tomatoes evenly.
Step 3: Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are softened and begin to burst, releasing their juices. Stir halfway through to ensure even roasting.
Step 4: Carefully remove the baking dish from the oven. Create a small space in the center of the roasted tomatoes and gently place the drained burrata ball into the space.
Step 5: Return the dish to the oven and bake for another 5-7 minutes, or until the burrata is warmed through and visibly softened and creamy in the center.
Step 6: Remove from the oven. Immediately sprinkle the fresh basil leaves over the top. Drizzle with the remaining 1 tablespoon of extra virgin olive oil and a pinch of red pepper flakes, if desired. Serve hot with crusty bread or pasta.
Notes
For best results, use good quality burrata and fresh, ripe cherry tomatoes. If you prefer a richer dish, add a tablespoon of balsamic glaze after baking. This dish is best served immediately while the burrata is warm and gooey.
