1 tbsp brown sugar (or maple syrup/honey)
1 tsp ground cinnamon, plus more for dusting
1/2 tsp vanilla extract
2 cups cottage cheese (2% or 4% milkfat)

Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a small baking dish or oven-safe ramekin, combine the diced apples, brown sugar, 1 tsp ground cinnamon, and vanilla extract. Toss gently to coat the apples evenly.
Step 3: Bake the apple mixture for 15-20 minutes, or until the apples are tender and fragrant, stirring halfway through. The exact time will depend on the apple variety and size of dice.
Step 4: While the apples are baking, spoon 1 cup of cottage cheese into each of two serving bowls. If you prefer your cottage cheese warm or smoother, you can gently heat it in the microwave for 30-60 seconds or blend a portion of it until creamy.
Step 5: Once the baked apples are ready, carefully spoon half of the warm apple mixture over the cottage cheese in each bowl.
