Ingredients
2 medium eggplants (about 1.5 lbs total)
1/4 cup tahini
2-3 cloves garlic, minced
3-4 tablespoons fresh lemon juice (or to taste)
2 tablespoons extra virgin olive oil, plus more for garnish
1/2 teaspoon ground cumin (optional)
Salt to taste
Freshly ground black pepper to taste
Fresh parsley, chopped (for garnish)
Pomegranate seeds (optional, for garnish)
Instructions
Step 1: Prepare Your Eggplants. Wash and dry the eggplants. Prick them several times all over with a fork or knife. This allows steam to escape during cooking and prevents them from bursting.
Step 2: Char the Eggplants. This is the most crucial step for an authentic smoky babaganoush! Place eggplants directly over the open flame of a gas burner on medium-high heat. Use tongs to turn them every 5-7 minutes, allowing the skin to blacken and blister on all sides. Continue until the eggplants are completely collapsed and very soft, about 15-25 minutes, depending on their size. (Alternatively, place on a hot grill or under a high broiler, turning frequently, until charred and soft.)
Step 3: Cool and Peel. Once charred, immediately transfer the hot eggplants to a bowl and cover tightly with plastic wrap or a lid for about 10-15 minutes. This steaming process helps the skin loosen, making it much easier to peel. Once cool enough to handle, carefully peel away the charred skin. Don't worry if a few small bits of char remain; they will only add to the smoky flavor.
Step 4: Drain Excess Liquid. Place the peeled eggplant flesh in a colander set over a bowl. Use a spoon or your hands to gently press out any excess liquid. This step is vital to prevent your babaganoush from becoming watery.
Step 5: Mash the Eggplant. Transfer the drained eggplant flesh to a large bowl. Use a fork, potato masher, or a food processor (use the pulse setting briefly to avoid over-processing) to mash the eggplant until mostly smooth but still with some texture.
Step 6: Mix in Remaining Ingredients. Add the tahini, minced garlic, lemon juice, extra virgin olive oil, and cumin (if using) to the mashed eggplant. Mix well until everything is thoroughly combined and the babaganoush is creamy.
Step 7: Season and Serve. Season the babaganoush generously with salt and freshly ground black pepper to taste. Taste and adjust lemon juice, salt, or garlic as needed. For the best flavor, let the babaganoush sit for at least 30 minutes in the refrigerator for the flavors to meld. When serving, transfer to a shallow bowl, drizzle with a little more extra virgin olive oil, and garnish with fresh chopped parsley and optional pomegranate seeds.
Notes
For the best smoky flavor, char the eggplants directly over an open flame on a gas stove or grill. If using an oven, turn on the broiler to high and place eggplants directly under the broiler, turning frequently. Adjust lemon juice and garlic to your personal taste.
