Ingredients

4 cups (about 500g) mixed berries (fresh or frozen, e.g., raspberries, blackberries, cranberries)
4 cups water
1/4 cup honey or maple syrup (adjust to taste)
1 inch fresh ginger, peeled and thinly sliced
2 cinnamon sticks
2 star anise pods

Instructions

Step 1: Combine all ingredients in a medium saucepan. Add the mixed berries, water, honey (or maple syrup), sliced fresh ginger, cinnamon sticks, and star anise pods to the saucepan.
Step 2: Bring the mixture to a gentle simmer over medium heat. Stir occasionally to dissolve the sweetener and ensure all ingredients are well combined. Do not let it come to a rolling boil.
Step 3: Reduce heat to low, cover, and let it simmer for 15-20 minutes. This allows the flavors to meld and the berries to break down, creating a rich base for your Autumn Berry Drink.
Step 4: Remove the saucepan from the heat and let it steep for another 5 minutes, allowing the spices to further infuse the drink.
