1 lb (450g) fresh asparagus, woody ends snapped off, cut into 1-inch pieces
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Zest of 1 large lemon
Juice of 1 large lemon (about 3-4 tablespoons)
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped
Salt and freshly ground black pepper to taste
Reserved pasta water, as needed

Instructions

Step 1: Bring a large pot of heavily salted water to a rolling boil. While it heats, prepare your asparagus by snapping off the woody ends and cutting the tender spears into 1-inch pieces.
Step 2: Once the water is boiling, add the pasta and cook according to package directions until al dente. About 3-4 minutes before the pasta is done, add the cut asparagus to the boiling water with the pasta. This ensures the asparagus cooks just until tender-crisp.
Step 3: Before draining, reserve about 1 cup of the starchy pasta water. This liquid is gold for emulsifying the sauce and achieving the perfect consistency in your asparagus pasta.
Step 4: In a large skillet or wide pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant. Be careful not to burn the garlic!
