1/2 tsp salt
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil (or other neutral oil)
2 large eggs, room temperature
1 tsp vanilla extract
2 cups peeled, cored, and finely diced apples (about 2 medium apples, like Granny Smith or Honeycrisp)

Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, allspice, and salt. Set aside.
Step 3: In a separate medium bowl, whisk together the wet ingredients: granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined and smooth.
Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay. Overmixing can lead to a tough apple bread recipe.
