Ingredients
1/2 cup unsalted butter
1 1/2 cups heavy whipping cream
2 cups freshly grated Parmigiano-Reggiano cheese
2 cloves garlic, minced
1/4 teaspoon ground nutmeg
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Place a large skillet or saucepan over medium-low heat and melt the butter slowly until it begins to foam.
Step 2: Add the minced garlic to the melted butter and sauté for about 1 minute, ensuring it stays translucent and does not brown.
Step 3: Pour in the heavy whipping cream and whisk gently. Bring the mixture to a very light simmer for 3-5 minutes until it begins to slightly thicken.
Step 4: Reduce the heat to low. Add the grated Parmesan cheese one handful at a time, whisking continuously until the cheese is completely melted and the sauce is smooth.
Step 5: Stir in the ground nutmeg, salt, and black pepper. Taste and adjust seasonings as needed.
Step 6: Remove from heat immediately and toss with your favorite cooked pasta, adding a tablespoon of pasta water if the sauce is too thick.
Notes
Always use fresh garlic and freshly grated cheese for the best results. Do not boil the sauce after adding the cheese or it may break.
