Ingredients
2 cans (16 ounces each) refried beans
1/4 tsp ground cumin (optional)
1/4 tsp chili powder (optional)
4 ripe avocados, mashed
2 tbsp fresh lime juice
1/4 cup finely minced red onion
2 tbsp chopped fresh cilantro
1 pinch salt and black pepper, to taste
16 ounces sour cream
1 packet (1 ounce) taco seasoning mix
1 cup chunky salsa (mild, medium, or hot)
2 cups shredded Colby Jack or cheddar cheese
1 cup diced Roma tomatoes (about 2 medium)
1/2 cup sliced black olives
1/4 cup chopped green onions
Tortilla chips, for serving
Instructions
Step 1: Prepare Your Dish. Choose a clear, shallow serving dish (e.g., a 9x13 inch rectangular dish or large round platter) to showcase the layers.
Step 2: Create the Refried Bean Base. In a medium saucepan, warm the refried beans over low heat, stirring occasionally, until soft and spreadable. Stir in cumin and chili powder if using. Spread evenly as the first layer in your serving dish.
Step 3: Prepare the Guacamole. In a separate bowl, mash the ripe avocados with lime juice, salt, and pepper. Stir in the minced red onion and chopped cilantro. Gently spread this guacamole over the refried bean layer, being careful not to mix them.
Step 4: Mix and Spread the Sour Cream Layer. In another bowl, combine the sour cream with the taco seasoning mix. Stir until well combined. Carefully spread this creamy mixture over the guacamole layer.
Step 5: Add the Salsa. Evenly spoon the salsa over the sour cream layer.
Step 6: Sprinkle the Cheese. Generously sprinkle the shredded Colby Jack or cheddar cheese over the salsa layer.
Step 7: Garnish for Festive Flair. Arrange the diced tomatoes, sliced black olives, and chopped green onions over the cheese. You can arrange them in a patriotic pattern or sprinkle evenly.
Step 8: Chill and Serve. Cover the dip loosely with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled with plenty of tortilla chips, pita bread, or vegetable sticks.
Notes
For best results and to prevent guacamole browning, assemble the dip closer to serving time or press plastic wrap directly onto the guacamole layer if making far in advance. You can also prepare the individual layers a day ahead and store them separately. Feel free to adjust spice levels by adding jalapeños or hot sauce.
