Perfect for low-carb and keto diets, this versatile bread is fluffy, flavorful, and incredibly simple to make with just Greek yogurt, almond flour, and baking powder. • Total Time: 40 minutes
  • Yield: 1 small loaf (approx. 8 slices) 1x

Ingredients

Scale

1 cup (240g) plain, full-fat, unsweetened Greek yogurt
1 cup (112g) super-fine blanched almond flour
2 teaspoons baking powder

Instructions

Step 1: Preheat your oven to 375°F (190°C). Line a small baking sheet or loaf pan with parchment paper, or lightly grease it.
Step 2: In a medium-sized mixing bowl, combine the full-fat Greek yogurt, super-fine almond flour, and baking powder.
Step 3: Mix well with a spoon or spatula until a thick, sticky dough forms. Do not overmix; just combine until no dry streaks of flour remain.
Step 4: Turn the dough out onto your prepared baking sheet or into your loaf pan. With slightly damp hands, gently shape the dough into a small loaf or desired shape.
Step 5: (Optional): For a golden crust, you can lightly brush the top of the dough with an egg wash (1 egg beaten with 1 tablespoon water) or a sprinkle of everything bagel seasoning before baking.
Step 6: Bake for 25-35 minutes, or until golden brown on top and a toothpick inserted into the center comes out clean.
Step 7: Once baked, remove the bread from the oven and let it cool completely on a wire rack before slicing. This is crucial for the bread to set properly.

Notes

Ensure you use full-fat, plain, unsweetened Greek yogurt and super-fine blanched almond flour for the best results. Cooling the bread completely before slicing is essential for texture. Store leftover bread in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to a week. It also freezes well, wrapped tightly, for up to a month.
