1 cup (225g) cottage cheese, full-fat recommended (drained of excess liquid)
1 cup (120g) self-rising flour, plus more for dusting
1 tsp garlic powder
2 tbsp melted butter (optional, for brushing)
1/2 tsp dried parsley or extra garlic powder (optional, for sprinkling)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: In a medium-sized mixing bowl, combine the drained cottage cheese, self-rising flour, and garlic powder. Mix with a spoon or your hands until a soft, slightly sticky dough forms. Do not overmix.
Step 3: Lightly flour your hands and a clean work surface. Turn the dough out onto the floured surface and gently knead a few times to bring it together into a cohesive ball. Add a tiny bit more flour if too sticky, but avoid excess.
Step 4: Roll the dough into a rectangle, about 1/2-inch thick. Using a knife or a pizza cutter, cut the dough into strips about 1-inch wide and 4-5 inches long.
Step 5: Arrange the dough strips on your prepared baking sheet, leaving a little space between each. If using, brush the tops with melted butter and sprinkle with extra garlic powder or dried parsley.
Step 6: Bake for 12-15 minutes, or until the breadsticks are golden brown and cooked through. Keep an eye on them as ovens vary.
Step 7: Remove from the oven. For extra flavor and shine, brush again with melted butter (garlic butter, if desired) and sprinkle with fresh chopped parsley or grated Parmesan cheese. Serve warm and enjoy!
Notes
For best results, use full-fat cottage cheese and ensure it's well-drained. If you don't have self-rising flour, mix 1 cup all-purpose flour with 1.5 tsp baking powder and 1/4 tsp salt. Breadsticks are best served warm. Leftovers can be stored in an airtight container for up to 3 days and reheated gently.
