4 cups cubed seedless watermelon
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
2 tablespoons fresh lime juice
1 tablespoon honey or agave nectar
2 tablespoons fresh mint, finely chopped
Instructions
Step 1: Prepare the watermelon by cutting it into uniform 1-inch cubes and place them in a large mixing bowl.
Step 2: Gently wash the strawberries, blueberries, and raspberries. Pat them completely dry with a paper towel. Slice the strawberries and add all berries to the bowl with the watermelon.
Step 3: In a small jar or bowl, whisk together the fresh lime juice, honey, and chopped mint until well combined.
Step 4: Drizzle the dressing over the fruit mixture. Using a large spoon or spatula, very gently fold the fruit to ensure even coating without crushing the berries.
Step 5: Serve the watermelon berry fruit salad immediately, or chill in the refrigerator for up to 30 minutes for maximum refreshment.
Notes
For best results, keep the watermelon and berries chilled separately until you are ready to assemble and serve. This prevents the watermelon juice from thinning the dressing too much.
