Ingredients
1 lb Smoked Sausage or Kielbasa, sliced into rounds
2 large Sweet Potatoes, peeled and diced into 1/2-inch cubes
2 medium Granny Smith or Honeycrisp Apples, cored and chopped
1 medium Red Onion, chopped
1 Bell Pepper (any color), chopped
2 tablespoons Olive Oil
1 teaspoon Dried Thyme or 1 tablespoon Fresh Rosemary
1/2 teaspoon Garlic Powder
Salt and Black Pepper to taste
Fresh Parsley for garnish
Instructions
Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 5-6 minutes. Remove the sausage from the skillet and set aside.
Step 2: In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes in a single layer. Cover and cook for 8-10 minutes, stirring occasionally, until they are tender and golden brown.
Step 3: Add the chopped red onion and bell pepper to the skillet with the potatoes. Sauté for another 3-4 minutes until the vegetables begin to soften.
Step 4: Stir in the chopped apples, thyme, garlic powder, salt, and pepper. Continue to cook for 5-7 minutes, uncovered, until the apples are soft but not mushy and the potatoes are crispy.
Step 5: Return the cooked sausage to the skillet and toss everything together to combine. Heat for an additional 2 minutes until everything is warmed through.
Step 6: Garnish with fresh parsley and serve your sweet potato apple and sausage skillet immediately while hot.
Notes
For the best results, use a cast-iron skillet to ensure the sweet potatoes get a nice crispy edge.
