Ingredients
1.5 cups all-purpose flour
1 tsp baking powder
0.5 tsp baking soda
1 tsp ground cinnamon
2 tbsp freshly grated ginger
1 cup grated carrots (finely grated)
1 cup Medjool dates, pitted and chopped
0.5 cup vegetable oil
2 large eggs
0.75 cup brown sugar
1 tsp vanilla extract
1 cup powdered sugar (for glaze)
2 tbsp fresh orange or lemon juice (for glaze)
1 tbsp citrus zest
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan, lining the bottom with parchment paper.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Set aside.
Step 3: In a large bowl, beat the eggs and brown sugar until pale and fluffy. Gradually whisk in the oil, vanilla extract, and freshly grated ginger.
Step 4: Fold in the finely grated carrots and chopped dates until evenly distributed in the wet mixture.
Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
Step 6: Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Step 8: Prepare the citrus glaze by whisking powdered sugar, citrus juice, and zest until smooth. Drizzle over the cooled loaf before slicing.
Notes
Ensure the ginger is very finely grated for the best texture. If dates are dry, soak in hot water for 10 minutes.
