Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs, room temperature
1 cup granulated sugar
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
2 teaspoons lemon extract
1/3 cup lemon juice
1/2 cup neutral oil (vegetable or canola)
1/2 cup sour cream
1 cup powdered sugar (for glaze)
2 tablespoons heavy cream (for glaze)
1 tablespoon lemon juice (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan thoroughly.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
Step 3: In a large bowl, cream together the sugar, softened butter, and eggs using an electric mixer until light and fluffy.
Step 4: Add the vanilla extract, lemon extract, lemon juice, oil, and sour cream. Mix until completely smooth.
Step 5: Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix the batter.
Step 6: Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Allow the loaf to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Step 8: Whisk together the powdered sugar, heavy cream, and lemon juice to create the glaze. Pour over the cooled loaf and let it set for 30 minutes before slicing.
Notes
Using lemon oil instead of just extract provides a much deeper citrus flavor. Ensure the cake is fully cooled before glazing to prevent the icing from melting.
