Ingredients

1.5 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1.5 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
2 large eggs
1/2 cup vegetable oil or melted coconut oil
1/2 cup maple syrup
1 tsp vanilla extract
1.5 cups grated carrots (about 3 medium carrots)
1 cup Medjool dates, pitted and chopped
4 oz cream cheese, softened
2 tbsp butter, softened
1 cup powdered sugar
2 tbsp pure maple syrup (for the cream)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan, or line it with parchment paper for easy removal.
Step 2: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined.
Step 3: In a separate bowl, beat the eggs with the oil, maple syrup, and vanilla extract until smooth.
Step 4: Stir the grated carrots and chopped dates into the wet mixture, ensuring the dates are separated and not clumped together.
Step 5: Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Do not overmix.
Step 6: Pour the batter into the prepared loaf pan and smooth the top.
Step 7: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 9: While the loaf cools, beat the softened cream cheese and butter together until fluffy. Add the powdered sugar and 2 tablespoons of maple syrup, beating until smooth.
Step 10: Once the loaf is completely cold, spread the maple cream over the top and serve.

Notes

Ensure the loaf is completely cool before frosting, otherwise the maple cream will melt and run off.
