2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1.5 cups granulated sugar
1/2 cup brown sugar, packed
1.25 cups vegetable oil
4 large eggs, room temperature
3 cups finely grated carrots
1 cup chopped walnuts
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract

Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans or line them with parchment paper.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined.
Step 3: In a large bowl, beat the granulated sugar, brown sugar, and vegetable oil until combined. Add the eggs one at a time, beating well after each addition.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 5: Fold in the grated carrots and chopped walnuts using a spatula.
Step 6: Divide the batter evenly between the prepared cake pans and bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 8: To make the frosting, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
Step 9: Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake.
