Ingredients
12 oz Smoked Sausage or Kielbasa, sliced into rounds
8 oz Penne or Fusilli pasta
3 cups Broccoli florets, bite-sized
3 cloves Garlic, minced
2 tbsp Olive oil
1/2 cup Grated Parmesan cheese
1/4 tsp Red pepper flakes (optional)
Salt and black pepper to taste
1 tbsp Lemon juice
Instructions
Step 1: Bring a large pot of salted water to a boil and cook the pasta according to package directions, adding the broccoli florets during the last 2-3 minutes of cooking.
Step 2: While the pasta boils, heat olive oil in a large skillet over medium-high heat and add the sliced smoked sausage.
Step 3: Sear the sausage for 5-6 minutes until browned and slightly crispy on the edges, then stir in the minced garlic and red pepper flakes for 1 minute until fragrant.
Step 4: Drain the pasta and broccoli, reserving about 1/4 cup of the pasta water.
Step 5: Add the pasta, broccoli, and reserved water to the skillet with the sausage; toss with Parmesan cheese, lemon juice, salt, and pepper until well coated and serves immediately.
Notes
Use turkey sausage for a lower-fat version. If the pasta seems dry, add a drizzle of olive oil or more pasta water.
