Ingredients
1 lb Smoked Sausage (Kielbasa), sliced into rounds
1.5 lbs Yukon Gold potatoes, diced into 1/2-inch cubes
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat. Add the sliced smoked sausage and cook until browned on both sides. Remove sausage from the skillet and set aside.
Step 2: In the same skillet, add the diced potatoes. If the pan is dry, add another tablespoon of oil. Spread the potatoes in a single layer and cook for 8-10 minutes, flipping occasionally, until golden and tender.
Step 3: Add the diced onion and bell peppers to the skillet with the potatoes. Sauté for 5-7 minutes until the vegetables are softened and slightly charred.
Step 4: Stir the browned sausage back into the skillet. Season with garlic powder, smoked paprika, salt, and pepper. Toss well to combine and heat through for 2-3 minutes.
Step 5: Remove from heat, garnish with fresh parsley, and serve your smoked sausage and potatoes skillet immediately.
Notes
For extra crispiness, par-boil the potatoes for 5 minutes before adding them to the skillet.
