Ingredients
2 lbs boneless skinless chicken breasts or thighs
1.5 cups of your favorite BBQ sauce
1/4 cup apple cider vinegar
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 medium red onion, finely diced
Salt and pepper to taste
Instructions
Step 1: Place the chicken breasts or thighs into the bottom of the slow cooker in an even layer.
Step 2: In a small bowl, whisk together the BBQ sauce, apple cider vinegar, garlic powder, and smoked paprika.
Step 3: Pour the sauce mixture over the chicken, ensuring each piece is well-coated, then sprinkle the diced red onion on top.
Step 4: Cover and cook on high for 3-4 hours or on low for 6-7 hours until the chicken is tender and easy to shred.
Step 5: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot and toss with the remaining sauce before serving.
Notes
For extra flavor, let the chicken sit in the sauce for 10 minutes after shredding before serving.
