1 lb ground breakfast sausage (mild or hot)
16 oz processed cheese (like Velveeta), cubed
10 oz can diced tomatoes with green chilies (like Ro-Tel), undrained
1/4 cup whole milk (optional, for thinning)
Fresh cilantro for garnish (optional)
Instructions
Step 1: Place the ground sausage in a large skillet over medium-high heat and cook until completely browned, breaking it into small crumbles as it cooks.
Step 2: Drain the excess grease from the skillet thoroughly to ensure the sausage queso dip isn't oily.
Step 3: Reduce the heat to low and add the cubed cheese and the entire can of diced tomatoes with green chilies (do not drain the tomatoes).
Step 4: Stir constantly until the cheese is completely melted and the mixture is smooth and well combined.
Step 5: If the dip is too thick, stir in a splash of milk until you reach your desired consistency.
Step 6: Transfer to a serving bowl or a small slow cooker to keep warm, garnish with cilantro if desired, and serve immediately with chips.
Notes
For a spicier kick, use hot Italian sausage and add a teaspoon of crushed red pepper flakes.
