Ingredients
1 large head of cauliflower
3 tablespoons extra virgin olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
1/2 cup fresh flat-leaf parsley
1/4 cup fresh cilantro
2 cloves garlic, minced
2 tablespoons lemon juice
1/4 cup olive oil (for the sauce)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Trim the leaves from the cauliflower but keep the stem intact. Slice the cauliflower into 1-inch thick steaks, starting from the center.
Step 3: Place the steaks and any loose florets on the baking sheet. Brush both sides with olive oil and season with salt, pepper, paprika, and garlic powder.
Step 4: Roast for 20-25 minutes, flipping halfway through, until the cauliflower is tender and the edges are golden brown.
Step 5: While roasting, prepare the sauce by blending the parsley, cilantro, minced garlic, lemon juice, and 1/4 cup olive oil in a food processor until smooth.
Step 6: Remove the roasted cauliflower steaks with garlic herb sauc from the oven and drizzle generously with the prepared sauce before serving.
Notes
Ensure the cauliflower is sliced evenly for consistent roasting. Use the remaining sauce as a dip for bread or a dressing for salads.
