Ingredients
1 lb fresh carrots, scrubbed and trimmed
2 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
3 tbsp tahini
1 tbsp pure maple syrup
1 tbsp fresh lemon juice
1 clove garlic, minced
1-2 tbsp warm water (to thin)
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Toss the prepared carrots with olive oil, salt, and pepper directly on the baking sheet until evenly coated.
Step 3: Arrange the carrots in a single layer and roast for 20-25 minutes, turning halfway through, until tender and caramelized at the edges.
Step 4: While the carrots roast, whisk together the tahini, maple syrup, lemon juice, and garlic in a small bowl.
Step 5: Gradually add warm water to the tahini mixture until it reaches a smooth, drizzling consistency.
Step 6: Transfer the hot carrots to a serving platter, drizzle generously with the sauce, and garnish with fresh parsley.
Notes
Ensure your tahini is well-stirred before measuring to get the best sauce consistency.
