A delightful recipe for cinnamon sugar pretzels that are soft, chewy, and coated in a perfect blend of sweet and spice.

Ingredients

1.5 cups warm water (110°F)
1 tbsp granulated sugar
2 tsp kosher salt
1 packet active dry yeast (2.25 tsp)
4.5 cups all-purpose flour
2 oz unsalted butter, melted
10 cups water
2/3 cup baking soda
5 tbsp unsalted butter, melted (for coating)
1/2 cup granulated sugar (for coating)
1 tbsp ground cinnamon

Instructions

Step 1: Combine warm water, sugar, and salt in the bowl of a stand mixer and sprinkle the yeast on top. Let sit for 5 minutes until foamy.
Step 2: Add the flour and 2 oz of melted butter. Use the dough hook to mix on low speed until combined, then increase to medium speed and knead until the dough is smooth and pulls away from the side of the bowl.
Step 3: Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for about 1 hour until doubled in size.
Step 4: Preheat oven to 450°F and line two baking sheets with parchment paper. Bring 10 cups of water and the baking soda to a rolling boil.
Step 5: Divide dough into 8 equal pieces. Roll each into a 24-inch rope and twist into a pretzel shape.
Step 6: Dip each pretzel into the boiling water for 30 seconds, then place on the prepared baking sheet.
Step 7: Bake for 12-15 minutes until golden brown.
Step 8: While baking, mix the coating sugar and cinnamon. Brush warm pretzels with melted butter and toss in the cinnamon sugar mixture.

Notes

Make sure the baking soda bath is boiling vigorously before dipping the dough.
