Ingredients
1 whole turkey (12-14 lbs), thawed
1/2 cup unsalted butter, softened
2 tbsp fresh sage, chopped
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp salt
1 tsp black pepper
1 large onion, diced
3 stalks celery, diced
6 cups bread cubes (sourdough or brioche)
1.5 cups chicken or turkey broth
2 eggs, lightly beaten
Instructions
Step 1: Preheat your oven to 325°F (165°C). Remove the turkey from the refrigerator and pat it thoroughly dry with paper towels, inside and out, to prepare for the oven roasted stuffed turkey process.
Step 2: In a small bowl, mix the softened butter with half of the chopped sage, rosemary, thyme, salt, and pepper to create an herb rub for the oven roasted stuffed turkey.
Step 3: Gently loosen the skin over the turkey breast and rub the herb butter directly onto the meat under the skin, then rub the remaining butter over the entire exterior of the oven roasted stuffed turkey.
Step 4: Prepare the stuffing by sautéing the onion and celery in a pan until soft. Mix with bread cubes, remaining herbs, broth, and beaten eggs. Lightly stuff the main cavity and the neck cavity of the turkey. Do not overpack.
Step 5: Place the oven roasted stuffed turkey on a roasting rack in a heavy pan. Truss the legs with kitchen twine and tuck the wing tips under the body.
Step 6: Roast the oven roasted stuffed turkey in the preheated oven, basting every 45 minutes with pan juices. Roast until a meat thermometer inserted into the thickest part of the thigh (not touching bone) and the center of the stuffing reaches 165°F (74°C).
Step 7: Remove the oven roasted stuffed turkey from the oven and transfer to a cutting board. Tent loosely with foil and let it rest for at least 30-40 minutes before carving to ensure maximum juiciness.
Notes
Ensure the turkey is completely thawed before beginning. Use a meat thermometer for accuracy. If the stuffing reaches temperature before the turkey, remove the stuffing and continue roasting the bird.
