14 oz smoked kielbasa, sliced into 1/2-inch rounds
1.5 lbs Yukon Gold potatoes, cut into 1/2-inch cubes
1 large red bell pepper, chopped
1 large green bell pepper, chopped
1 medium yellow onion, sliced
3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp dried oregano
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet with non-stick spray or line with parchment paper.
Step 2: In a large mixing bowl, combine the sliced kielbasa, cubed potatoes, chopped bell peppers, and sliced onion.
Step 3: Drizzle the olive oil over the mixture and sprinkle with garlic powder, smoked paprika, oregano, salt, and pepper.
Step 4: Toss everything together until the ingredients are evenly coated with oil and spices.
Step 5: Spread the mixture onto the prepared baking sheet in a single, even layer, ensuring the pan isn't too crowded.
Step 6: Roast for 15 minutes, then remove the pan from the oven and toss the ingredients with a spatula.
Step 7: Return to the oven and roast for another 15 minutes, or until the potatoes are golden and tender and the sausage is browned.
Step 8: Garnish with fresh parsley and serve hot.

For extra crispiness, ensure the potatoes are dried thoroughly after washing before tossing with oil.
