Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
2 cups heavy whipping cream, divided
1 tsp vanilla extract
2 lbs fresh strawberries, hulled and sliced
1/4 cup granulated sugar (optional, for the berries)
Instructions
Step 1: In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9x13 inch baking dish.
Step 2: In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
Step 3: In a separate bowl, whip 1 cup of heavy cream and the vanilla extract until stiff peaks form. Gently fold this into the cream cheese mixture.
Step 4: Spread half of the cream cheese mixture over the graham cracker crust in an even layer.
Step 5: Arrange half of the sliced strawberries over the cream layer.
Step 6: Spread the remaining cream cheese mixture over the strawberries.
Step 7: Whip the remaining 1 cup of heavy cream (add a tablespoon of sugar if desired) and spread it as the final top layer, then arrange the remaining strawberries on top.
Step 8: Refrigerate for at least 4 hours, or preferably overnight, before serving to allow the layers to set.
Notes
For the best results, use fresh, ripe strawberries. If the strawberries are a bit tart, toss them with a little granulated sugar before layering.
