1 lb (450g) whole carrots, scrubbed and trimmed
3 tablespoons pure maple syrup
2 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 sprigs fresh thyme or rosemary (optional)
Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone baking mat.
Step 2: In a small bowl, whisk together the maple syrup, olive oil, salt, and pepper until well combined.
Step 3: Place the carrots on the baking sheet and drizzle the maple glaze over them, tossing to ensure they are fully and evenly coated.
Step 4: Spread the carrots out in a single layer and roast for 20-25 minutes, tossing halfway through, until tender and caramelized.
Step 5: Remove from the oven, garnish with fresh parsley, and serve your maple glazed roasted carrots immediately.
Notes
For the best results, use carrots of similar thickness so they cook at the same rate. If using very thick carrots, slice them in half lengthwise.
