Instructions
Step 1: In a large mixing bowl, whisk together the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, salt, and honey until well combined.
Step 2: Add the cubed chicken thighs to the bowl and toss thoroughly to coat every piece. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
Step 3: If using wooden skewers, soak them in water for 20 minutes. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for air circulation.
Step 4: Preheat your air fryer to 400°F (200°C). Place the skewers in the basket in a single layer, ensuring they do not touch.
Step 5: Cook for 6 minutes, then flip the skewers. Cook for an additional 5-6 minutes until the chicken reaches an internal temperature of 165°F and is golden brown.
Step 6: Remove from the air fryer and let rest for 3 minutes before serving. Garnish with fresh parsley and extra lemon wedges.
Notes
For extra crispiness, pat the chicken dry before adding the marinade ingredients. If using chicken breasts, reduce cook time by 2 minutes to avoid drying out.
