Ingredients
12 lasagna noodles (cooked al dente)
15 oz whole milk ricotta cheese
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese (divided)
1 tablespoon fresh parsley, chopped
24 oz marinara sauce
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Step 1: Preheat your oven to 375°F (190°C) and spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
Step 2: Boil the lasagna noodles in salted water until al dente, drain, and lay them flat on parchment paper.
Step 3: In a medium bowl, combine the ricotta, egg, Parmesan, 1 cup of mozzarella, parsley, garlic powder, salt, and pepper.
Step 4: Spread approximately 2-3 tablespoons of the cheese mixture onto each noodle.
Step 5: Roll up each noodle tightly and place it seam-side down in the prepared baking dish.
Step 6: Top the lasagna roll ups with the remaining marinara sauce and the rest of the mozzarella cheese.
Step 7: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until bubbly.
Notes
Always dry your noodles before rolling to ensure the filling stays inside.
