Ingredients
1 lb flank steak or ribeye, thinly sliced
8 slices Provolone cheese
1 large green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and black pepper to taste
Optional: sliced mushrooms
Instructions
Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers (and mushrooms if using).
Step 2: Sauté the vegetables for about 5-7 minutes until they are soft and slightly caramelized. Season with salt and pepper, then remove from the pan and set aside.
Step 3: In the same skillet, add the remaining tablespoon of oil. Season the thinly sliced beef with garlic powder, salt, and pepper. Sear the beef over high heat for 1-2 minutes per side until just browned.
Step 4: Preheat your oven broiler. On a clean surface, lay out a slice of Provolone cheese. Place a small portion of the cooked beef and the sautéed vegetable mixture in the center.
Step 5: Roll the cheese tightly around the filling. Place the keto philly cheesesteak roll ups seam-side down on a parchment-lined baking sheet.
Step 6: Broil for 1-2 minutes, watching closely, until the cheese is melted and just beginning to brown. Serve immediately.
Notes
For extra flavor, you can brush the cheese with a little melted butter and parsley before broiling.
