Ingredients
16 oz Rotini pasta
1/2 cup Genoa salami, cubed
1/2 cup Pepperoni slices, halved
8 oz Mozzarella pearls
1 cup Cherry tomatoes, halved
1 English cucumber, diced
1 Red bell pepper, diced
1/2 cup Red onion, finely diced
1/2 cup Black olives, sliced
1/4 cup Fresh parsley, chopped
1 cup Zesty Italian dressing
1 tsp Dried oregano
Salt and pepper to taste
Instructions
Step 1: Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente. Drain and rinse immediately with cold water to stop the cooking process.
Step 2: In a very large mixing bowl, combine the cooled pasta, cubed salami, pepperoni, mozzarella pearls, cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Step 3: Pour the Italian dressing over the mixture. Add the dried oregano and fresh parsley. Toss thoroughly until all ingredients are evenly coated.
Step 4: Taste and season with additional salt and pepper if needed. Cover the bowl and refrigerate for at least 2 hours before serving to allow flavors to meld.
Step 5: Give the salad a quick toss before serving. If it seems dry, add a splash more dressing or a drizzle of olive oil.
Notes
For the best results, make this salad the night before you plan to serve it. The pasta will absorb the dressing for maximum flavor.
