A zesty, herb-filled, and perfectly balanced homemade italian dressing that is easy to whip up in minutes using pantry staples.

  • Total Time: 5 minutes
  • Yield: 1 cup 1x

Ingredients

Scale

3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon honey or maple syrup
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 teaspoon Dijon mustard (optional, for emulsification)

Instructions

Step 1: In a medium-sized glass jar or a small mixing bowl, combine the red wine vinegar, lemon juice, honey, and Dijon mustard.
Step 2: Add the dried oregano, dried basil, garlic powder, onion powder, salt, black pepper, and red pepper flakes to the vinegar mixture.
Step 3: If using a jar, pour in the olive oil, seal the lid tightly, and shake vigorously for 30-60 seconds until the ingredients are fully combined and emulsified.
Step 4: If using a bowl, slowly drizzle the olive oil into the vinegar mixture while whisking constantly until the dressing is thick and uniform.
Step 5: Taste the homemade italian dressing and adjust seasonings if necessary, adding more salt for depth or honey for sweetness.
Step 6: Let the dressing sit for at least 15-30 minutes before serving to allow the dried herbs to hydrate and infuse the oil.

Notes

Store in the refrigerator for up to 2 weeks. The olive oil may solidify when cold; simply let it sit at room temperature for 10 minutes and shake before using.
