1 lb ground turkey (93% lean)
1.5 lbs Yukon Gold potatoes, diced into 1/2-inch cubes
2 tablespoons olive oil
1 small yellow onion, finely diced
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon salt (plus more to taste)
1/4 teaspoon black pepper
1/4 cup chicken broth or water
Fresh parsley for garnish
Instructions
Step 1: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the diced potatoes in a single layer.
Step 2: Cook the potatoes for 8-10 minutes, stirring occasionally, until they are golden brown and starting to soften.
Step 3: Add the diced onion to the skillet and sauté for another 3 minutes until translucent.
Step 4: Push the vegetables to the edges of the pan and add the ground turkey to the center. Break the meat apart with a wooden spoon.
Step 5: Season the meat and potatoes with salt, pepper, smoked paprika, oregano, and minced garlic.
Step 6: Cook until the turkey is fully browned and no pink remains, approximately 5-7 minutes.
Step 7: Pour in the chicken broth, reduce heat to low, and cover the pan for 4-5 minutes to ensure the potatoes are completely tender.
Step 8: Remove the lid, garnish with fresh parsley, and serve immediately.
Notes
For extra crispiness, ensure the potatoes are dried thoroughly after dicing before adding them to the hot oil.
