1 lb lean ground turkey (93/7)
2 large sweet potatoes, diced into 1/2 inch cubes
1 medium yellow onion, diced
3 cloves garlic, minced
1 red bell pepper, chopped
2 tbsp olive oil, divided
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese (optional)
Fresh parsley or cilantro for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C). On a large rimmed baking sheet or in a 9x13 inch baking dish, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.
Step 2: Roast the sweet potatoes in the oven for 15-18 minutes until they start to soften.
Step 3: While potatoes roast, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the ground turkey and onion. Cook until the turkey is browned and the onion is translucent, breaking up the meat with a spoon.
Step 4: Stir in the minced garlic, bell pepper, chili powder, cumin, and smoked paprika. Cook for another 2-3 minutes until the pepper begins to soften and spices are fragrant.
Step 5: Remove the baking dish from the oven. Carefully add the ground turkey mixture to the sweet potatoes and toss gently to combine. Spread back into an even layer.
Step 6: Bake for an additional 15 minutes. If using cheese, sprinkle it over the top during the last 5 minutes of cooking. Garnish with fresh herbs before serving.

Notes

To make this Paleo or Whole30 compliant, simply omit the cheese. You can also add kale or spinach during the last 10 minutes of baking for extra greens.
