Ingredients
1 lb lean ground turkey (93% lean)
1 small head of green cabbage, shredded (about 6-7 cups)
1 medium yellow onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons soy sauce (or coconut aminos)
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
2 green onions, sliced
1 tablespoon olive oil
Sesame seeds for garnish
Salt and pepper to taste
Instructions
Step 1: Heat olive oil in a large skillet or wok over medium-high heat.
Step 2: Add the ground turkey to the skillet and cook, breaking it into small crumbles with a spoon, until fully browned and no longer pink.
Step 3: Add the diced onion to the skillet and sauté for 3-4 minutes until softened.
Step 4: Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant.
Step 5: Add the shredded cabbage to the skillet. It will be very full, but it will wilt down as it cooks. Stir frequently to combine with the turkey and aromatics.
Step 6: Pour in the soy sauce, toasted sesame oil, and rice vinegar. Continue to cook for 5-7 minutes, or until the cabbage is tender but still has a slight bite.
Step 7: Season with salt and pepper as needed. Garnish with sliced green onions and sesame seeds before serving your ground turkey and cabbage skillet.
Notes
For extra flavor, add a drizzle of Sriracha or chili garlic sauce at the end. You can also swap the turkey for ground chicken or beef.
